If you think you’ve tried every way to cook zucchini, think again. A friend of mine recently introduced me to this amazing recipe, and it completely changed how I see this vegetable.
The first time I tasted her version, I was blown away—not only by the flavor, but by how gorgeous it looked on the plate. Trust me, this one’s a keeper.
Here’s what you’ll need:
2 medium zucchinis (about 500 g)
100 g of hard cheese
4 eggs
2 tablespoons each of breadcrumbs and flour
A few garlic cloves
A bunch of fresh herbs
Sunflower oil for frying
And for the garlic dipping sauce:
4 tablespoons of thick sour cream
2 garlic cloves
A handful of chopped dill
Salt to taste
Let’s get cooking!
First, slice the zucchini thinly. Sprinkle each slice with salt and pepper, then let them sit for about 20 minutes. This step helps them release moisture and soak up more flavor.
While you wait, mix the eggs, grated cheese, minced garlic, and chopped herbs in a bowl. Season with a bit more salt and pepper.
In a separate bowl, mix the flour and breadcrumbs together. Take each zucchini slice, coat it in the dry mix, then dip it into the cheesy egg mixture.
Fry each piece in a little oil until golden brown on both sides. Make sure they’re well coated — I even spoon a bit more of the cheesy mix on top before flipping them.
Once done, lay them on paper towels to soak up any extra oil.
